Summer Chili

It is no where near cooling down yet in Texas.  The news this morning was talking about a "cool" front that will bring us down to the low 90s... even in Florida (where I'm originally from), the low 90s is not considered a cool front.  A cool front is the 70s or 60s at most.  Regardless of our warm weather, hubby requested I make my turkey chili.  Well, it's my mom's turkey chili, and really it's a Weight Watchers One-Point Hearty Chili.

The chili is full of vegetables and uses ground turkey instead of beef.  Because of the veggie content and lean meat, you are able to eat a lot of more it without feeling guilty.  Hubby likes to serve his with cheddar cheese on top and flatbread crackers.  I'm sure those additions negate some of the healthiness of the recipe, but overall it's a great way to have something good tasting and good for you.  The chili also freezes well.  The recipe makes a big batch, so I freeze what we don't use.  Like the meatballs, it makes a great quick dinner on a day when I'm too busy to cook.

It may not look pretty, but it is a great dish... and what chili looks pretty?

Happy Wednesday everyone!
